Taco 🌮
Tortilla cut into circles with filling ~
Marinated chicken breasts with 2 cloves of garlic and 1 tablespoon of lemon juice, 2 tablespoons of oil in a pan over heat.
Add the chicken;
it will release water, which it will absorb again. Then add 2 onions and bell peppers.
Spices:
1 tablespoon paprika
Curry
Chicken spices
Salt and a pinch of pepper
½ tablespoon coriander
Cumin
At the very end, add slices on top ~ mozzarella cheese. Bake in a preheated oven at 200°C.

Serves: 2
You’ll need:
- 250g lean beef mince
- 1/2 onion, finely diced
- 4 mushrooms, finely diced
- 1 beef stock cube (add an extra half for beefiness!)
- 250g passata
- 1 tsp mixed herbs
- Pinch garlic granules
- A good pinch black pepper
- Pinch of sugar
- 1 bay leaf
- 4 mini tortilla wraps
- 80g white sauce (lasagne sauce)
- 50g shredded mozzarella (or use light cheddar too for extra flavour!)
Optional: Fresh parsley & parmesan
Method:
Fry the onion and mushrooms in low calorie spray for a few minutes to soften then add the beef mince and fry for a further 3-4 mins. Add the rest of the ingredients and 250ml of boiling water. Mix well and simmer for 8-10 minutes or until the water has evaporated then remove the bay leaf.
Place the bolognese into the 4 tacos (freeze the rest of the bolognese or use for another recipe!) then add a heaped tbsp of white sauce and mozzarella. Fold then place in the air fryer along with another heaped tbsp of white sauce for each taco and gently press the mozzarella into the white sauce to stop it from blowing away! Air fry on 200C for 5-6 mins or until the cheese has melted and serve with fresh parsley.
*Optional - add a sprinkle of Parmesan before cooking for extra flavour!
