Mutton Curry – English
Marinate mutton with ginger-garlic paste, red chilli powder, turmeric, salt, garam masala, coriander powder, chopped onions, and mustard oil. Let it rest for 30 minutes.
Dry roast bay leaf, dry red chillies, coriander seeds, cumin seeds, cloves, black pepper, black and green cardamom. Grind into a fine masala.
In a pot, heat ghee. Add bay leaf, whole red chilli, and garlic. Add marinated mutton, sauté well, then add the ground masala. Cook on low flame until the mutton is soft and flavorful.
Serve hot with @heavensharvestbasmati .
मटण करी – मराठी
मटणाला आलं-लसूण पेस्ट, तिखट, हळद, मीठ, गरम मसाला, धणेपूड, चिरलेला कांदा आणि मोहरीचं तेल घालून ३० मिनिटं मॅरिनेट करा.
तेजपान, सुकं लाल तिखट, धणे, जिरे, लवंग, काळी मिरी, मोठी व लहान वेलची भाजून त्याची बारीक पूड तयार करा.
हांडीत तूप गरम करून त्यात तेजपान, सुकं तिखट आणि लसूण टाका. नंतर मॅरिनेट मटण घालून परता आणि तयार मसाला घालून मटण मंद आचेवर शिजवा.
