🧭 …ғɪɴᴅ ғᴏᴏᴅ ᴡʜᴇɴ ᴛʜᴇʀᴇ’s ɴᴏ sᴜᴘᴇʀᴍᴀʀᴋᴇᴛ ᴀʀᴏᴜɴᴅ! In the tropical areas of Indonesia, young fern shoots (also called fiddleheads) can be foraged almost everywhere and cooked as a wild vegetable. It has a mild, slightly nutty taste – somewhere between spinach and asparagus. Important: Only harvest young, tightly coiled shoots and make sure you can clearly identify the species. Some ferns are not edible. Afterwards we gently clean them, blanch them well, and then sauté them in a pan. Our short afternoon foraging was less about survival but more about having fun and a nice family dinner with everyone 🤗🌿 But for everyone who is inspired - it’s a wonderful way to reconnect with where food actually comes from. How to forage jelly ears aka wood ears 🍄‍🟫🌳 These cute little fungi grow mostly on dead or dying elder and sometimes other broadleaf trees. They really do look like ears: soft, wobbly, tan to deep brown, smooth on top and gently veined underneath, with that distinctive jelly-like texture and no gills. They’ve been used for centuries in Asian cooking and traditional medicine, often praised for their immune and circulation-supporting properties, but what I love most is how they behave in the kitchen. Once they’re properly identified and cleaned, you can slice them and treat them almost like a noodle: into broths, stir-fries, or a simple simmer with garlic, soy, ginger and spring onions. They stay slightly crunchy and soak up whatever flavour you give them. One of the best things about jelly ear mushrooms is how well they keep. You can dehydrate them completely and store them for years, then simply rehydrate in warm water when you’re ready to cook. They’re the perfect wild pantry staple: a little jar of texture ready to drop into soups and stocks whenever you need it. As always, only eat wild mushrooms if you are absolutely confident in your identification, or you’re learning with an experienced guide 🌿 You can find my spring foraging walk dates on my website 🫶🏻
