THNew favorite cookie unlocked 🔓 These fluffernutter cookies are amazing and actually easy to make even with the extra steps! Here’s the cookie recipe:
Ingredients
- 1/2 cup creamy peanut butter
- 1/2 cup of salted butter, room temperature
- 1 cup light brown sugar, packed
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon cornstarch
- 1 cup marshmallow fluff
Directions
- Preheat the oven to 350°F
- In a bowl, add peanut butter, butter, and brown sugar. Combine the mixture 2-3 minutes.
- Add egg and vanilla and mix until combined.
- Add flour and cornstarch
- Mix on low for about 1 minute
- Drop dough onto a lined baking sheets. Leave a little extra dough in the bowl for later. Flatten dough balls with a spoon to give a spot for the fluff.
- Using two HOT spoons, add about 1 tablespoon of marshmallow fluff to the center. This heat helps the fluff not stick.
- Bring the dough up a little around the marshmallow fluff and then using the extra dough, flatten small pieces and place on top
- Bake the cookies for 11 minutes and enjoy!
