Raising cane’s chicken tenders at home 🥰 Marinade: • 1.5 lb (700 g) chicken tenders • 1 cup buttermilk • 1 tsp hot sauce (i use tabasco) • 1 tsp salt • 1 tsp black pepper • 1/2 tsp garlic powder Dry coating: • 2 cups (300 g) all-purpose flour • 2/3 cup (90 g) cornstarch • 1 tsp baking powder • 1.5 tsp salt • 1 tsp black pepper • 1 tsp smoked paprika • 1 tsp garlic powder • 1 tsp cayenne pepper (optional) Cane’s sauce: • 1/2 cup (120 g) mayonnaise • 1/4 cup (60 g / 4 tbsp) ketchup • 1/2 tsp worcestershire sauce • 1 tsp black pepper • 1/2 tsp garlic powder • 1/2 tsp paprika Instructions: 1. Mix all marinade ingredients, add chicken, and refrigerate for at least 4 hours or overnight. 2. Combine dry coating ingredients. add a bit of marinade to create small flour clumps. 3. Coat chicken evenly, pressing gently so the flour sticks well. 4. Heat oil to 170–175°c and fry for 4–6 minutes until golden and crispy. drain on a wire rack. 5. Cooking can be easy episode 5: Easy Nashville Hot Mozzarella Sticks🧀 Ingredients • 1 lb block mozzarella • 3 eggs • All-purpose flour • Breadcrumbs (any kind) Nashville Hot Sauce • 1 tsp cayenne • 1 tsp garlic powder • 1 tsp salt • 1 tsp chili powder • 2 tsp brown sugar Steps: 1️⃣ Cut the Cheese Cut the mozzarella into sticks or squares, thickness is totally preference. Thinner sticks = more crunch, thicker sticks = more cheese pull. 🍤 Shrimp Alfredo Garlic Bread Ingredients 1 loaf French bread, sliced in half lengthwise 1 lb shrimp, peeled and deveined 1 tbsp Cajun seasoning (or seasoning of choice) ½ tsp black pepper 1 tbsp olive oil 2 tbsp butter 3–4 garlic cloves, minced 1 cup heavy cream ¾ cup grated Parmesan 1 cup shredded mozzarella 2 tbsp softened butter (for garlic spread) 1–2 tbsp chopped fresh parsley ½ tsp Italian seasoning Chili flakes, to taste Salt, if needed Method Heat olive oil in a pan over medium-high heat. Add shrimp and sprinkle with Cajun seasoning and black pepper. Toss to coat and cook 1–2 minutes per side until just cooked through. Remove shrimp from the pan and set aside. In the same pan, melt butter and add minced garlic. Sauté for about 20–30 seconds until fragrant. Pour in the heavy cream and let it gently simmer for 2–3 minutes. Add black pepper, Italian seasoning, and chili flakes to the sauce and mix well. Stir in Parmesan and cook until smooth and creamy. Taste and adjust salt if needed. Remove from heat. GARLIC SHRIMP PASTA 🍝😋 Ingredients 12 oz 340 g spaghetti or linguine 1 lb 450 g raw shrimp, peeled and deveined 4 tablespoons olive oil divided 6 cloves garlic finely minced ½ teaspoon salt ½ teaspoon black pepper ½ teaspoon paprika ¼ teaspoon red pepper flakes optional ½ cup chicken broth ½ cup heavy cream ½ cup freshly grated Parmesan cheese 2 tablespoons butter 2 tablespoons fresh parsley chopped Juice of ½ lemon Instructions Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve ½ cup of pasta water, then drain. In a bowl, season shrimp with salt, pepper, paprika, and red pepper flakes. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add shrimp and cook 1–2 minutes per side until pink and just cooked through. Remove shrimp and set aside. FULL RECIPE ⬇️ INGREDIENTS - ~3 lb Chuck Roast (Pro tip: Make sure it's well marbled) - Yellow mustard - BBQ rub of choice (I used @blazingstarbbq All In One) - 2-3 tbsp of brown sugar - 5-6 tbs of butter - 3/4 cup BBQ Sauce of choice (I used @traegergrills Honey BBQ) Note(s): Measurements are estimated, adjust ingredients to your liking. DIRECTIONS 1. Cut the chuck roast into ~1.5 in cubes. Coat them in yellow mustard as a binder then season on all sides with the bbq rub. 2. Place them on the smoker at 250°F until they develope some bark and reach around 165-175° internal (2-3 hours) then take them off the smoker and place them in a large pan. Sprinkle on the brown sugar and more bbq rub. Add the pats of butter and drizzle on the bbq sauce then cover tightly in foil. 3. Place them back on the smoker until they reach ~205° internal and are probe tender (1-2 hours). Once done, pull the foil off and let the sauce tack up for ~15-20 minutes then pull them off. 4. INGREDIENTS Chicken & Marinade 2 lb boneless, skinless chicken thighs 1 lemon, zested ⅛ cup soy sauce ¼ cup maple syrup 1 tbsp garlic powder 1 tbsp smoked paprika Glaze 2 tbsp butter 4 cloves garlic, minced ½ cup maple syrup ⅓ cup soy sauce 2 tbsp rice vinegar 3 tsp Momofuku chili oil 1 tsp cornstarch + 2 tbsp water (slurry) INSTRUCTIONS 1.In a bowl add chicken thighs and season with soy sauce, maple syrup, lemon zest, garlic powder, and smoked paprika, coat well. 2.Preheat the air fryer to 400°F. Place thighs in a single layer and cook for 15 minutes, flipping halfway, until golden and cooked through (165°F internal temp). 3.Make glaze: In a saucepan, melt butter.
