🌟For Chicken Curry
•1 Bulb Garlic
•2 inch Ginger
•2 Fried onions (homemade)
•1 chopped Onion
•3 green Chillies
•Handful of coriander + mint leaves
•250g Yogurt
•3 Tomatoes
•30g Lemon juice
🌟Spices
•1tbsp Red chill powder
•1tbsp Salt
•1tsp Turmeric powder
•1tsp Cumin powder
•1tsp Coriander powder
•1 1/2tsp Garam masala powder
•1/2tsp Black pepper powder
📌This is perfect measurement of spices as my taste however you can adjust to your liking !
•2 Big spoon Oil
•3 cups @Kllar Extra long grain Basmati Rice
•1 1/2kg Chicken
•Saffron + Milk (for topping)
•Red & Orange Food coloring
🌟Spices for Rice
•2 Bay leaf
•5-6 Green Cardamom
•2 Black Cardamom
•9-10 Black Pepper Corn
•3 Whole red chili
•2 Star Anise
•3-4 Cloves
•2tsp Salt (as your taste)
Mint , Coriander, Fried onions & Lemon for garnish

✨Method
•First blend all the chicken curry ingredients & powdered spices in a food processor
(Make a fine paste )
•In a large pot add oil and chicken fry until the color changes
•Next add the paste ,tomatoes & cook for 5-6 minutes until the water is dried and chicken is cooked throughly
•In a separate pan boil the rice with spices and boil until 85%cooked
•Drain the water then layer with curry ,rice repeat the process until finished
•Pour saffron milk then garnish with food color ,mint ,coriander fried onions , & lemons

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬 𝐟𝐨𝐫 𝐘𝐚𝐤𝐡𝐧𝐢:
Mutton with bones 1/2 kg
Garlic 1 bulb with peel
Ginger 1 inch
Black cardamom 2
Fennel seeds 1 1/2 Tbsp
Corriander seeds 1 1/2 Tbsp
Peppercorns 8-10
Cinnamon stick 1 inch
Bay leaves 2
Star anis 1
Chicken cube (optional)
Salt 2.5 tsp
Water 3.5 cups
𝐌𝐞𝐭𝐡𝐨𝐝:
Take a clean muslin cloth and tie the cubed onion pieces, garlic pods, whole ginger, bay leaves, black cardamom, black peppercorns, coriander seeds, cloves, cinnamon stick and star anis in it. This is called bouquet garni.
Now add Mutton with bones water and this potli into your instant pot and guve pressure for 10 mins.
Check after 10 mins if meat is tender.
Transfer everything in another pot and put potli in 1/2 cup tap water, after few mins squeeze the potli and add that water to your yakhni. Your yakhni is ready.
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬 𝐟𝐨𝐫 𝐏𝐮𝐥𝐚𝐨:
Basmati rice 3 cups
Cumin seeds 1 tsp
Onion 1/2 cup finely sliced
Garlic one bulb peeled and finely grated
Yogurt 1 cup (optional)
Green chilli 1
Oil 1/2 cup
Ghee 2 Tbsp
𝐌𝐞𝐭𝐡𝐨𝐝:
Turn on Instant Pot on sauteé mode on high, add oil & ghee together. Fry onion & Keep 1/4th of it aside for adding later.
In the remaining onions, add cumin seeds fry till the onion becomes brown. Don't burn your onions at this point be v careful.
Now add pre cooked mutton and bfry for 30 sec ( don't over fry or else your mutton will become black).
Add yakhni and make sure your yakhni is 3.5 cups only not more.
Now close the lid and seal the valve.Turn on the rice mode and your IP will automatically detect the temp and duration.
It should be on low and 8 mins technically.
If your IP will detect it more then 10 mins. Please fix it manually to 8 mins. lol IP is a machine and can lead you weong sometimes 😂
Any how after 10 mins give a quick pressure release and check your pulao.
Now for dum you have to close the lid once more and keep it on keep warm for 10 to 15 mins.
