As a result of chewing, these crystals are released from their specialized cells, called idioblasts, causing irritation to the mucous membrane of the mouth! That’s why they make your mouth itchy 🪡 Just as kiwis, pineapples possess needle-shaped structures, called raphides, which are crystals made of calcium oxalate and are known to cause irritation in the mouth! When chewing, these crystals are being freed from their specialized cells, called idioblasts, and cause irritation to the mouth’s mucous membranes! Pineapples are also pretty acidic and contain cysteine enzymes called bromelain that digest proteins which are also known to produce a itchy sensation. The combination of those three factors is deadly 🪦 Calcium oxalate crystals can be found in almost all photosynthetic organisms from micro algae to flowering plants and their main functions are to store calcium for later use, to protect plants from herbivores and for metal detoxification. These beautiful crystals can be found in various tissues like leaves, shoots, roots and fruits! In fact, there are a total of 215 plant families that accumulate calcium oxalate in their tissues. It has been shown that snails avoid eating plant material with raphides but once it’s treated with acid to dissolve those crystal, snails consume the plant material! 🐌 Calcium oxalate crystals are amongst the first structures that have been observed under the microscope by Leeuwenhoek, the father of microscopy, in the 1600s. Since then, these crystals have been found in rocks, soil and in bacteria, protists, fungi, plants and animals. You can also see a structure that looks like a spring, it’s called the xylem and its role is to transport water across the plant’s tissues! Pineapple, known as Ananas comosus, is a tropical plant from the Bromeliaceae family and is mostly cultivated in Costa-Rica, Brazil, India, China, Philippines, Thailand and Colombia.
