Me in my head piping rosette cakes: “down and around, down and around!”
I used to struggle with making my rosettes look exactly the same, but now I have this method!
The other tip I forgot to mention in the video is when you pipe the next row of rosettes, pipe them in the space above where two rosettes below meet. Does that make sense? This way you’ll fill in all the gaps, and the consistency of your piping is what will give your cake that professional finish.

With rosette cakes, I find it very helpful to create bands of equal sizes (using a toothpick to engrave the outline). The customer won’t see them — but they act as a guide and help me make sure the rosettes are all the same size.
For the darkest layer, I used dark cocoa powder to get that particular shade; for the lightest, I mixed in a little white buttercream.🤎🤎🤎
The cake is eggless chocolate, with eggless chocolate buttercream between layers.

SAI first saw @britishgirlbakes try this technique and it got stuck icy head until I had a chance to try it recently. It’s basically a rosette cake, frozen until the buttercream is firm - then frosted with a contrasting colour and scraped to reveal the roses. It’s giving toile wallpaper… right?
Note: this is standard American buttercream. I did have to pop it into the freezer for another blast of cold while scraping to prevent bleeding of colours. There was a lot of frosting on this cake! According to my video evidence I spent almost 18 minutes scraping this cake to the situationship I wanted to be in with it.
