Emilee’s WW GREEK CHICKEN ORZO SALAD 🥗 #7points #ww
1. Cup up 1.5 lbs chicken breast into bite size pieces. Follow my green chicken recipe (found in highlights) and cook until golden brown/cooked through! 0 points!
2. Boil 1 box of orzo in water with a little salt (16 oz) until cooked through. Orzo is just pasta feel free to sub for a different shape but highly recommend this shape! Strain and set aside. Whole wheat orzo reduces points but I use regular bc it’s easier to find.
3. Chop the following into tiny pieces. 1 cucumber, 1 pint cherry tomatoes, 3/4 cup fat free feta, 1/2 red onion, 1 bell pepper and throw in with cooked/drained orzo and mix.
4. Mix in the chicken, 1 tablespoon Italian seasoning, 1/2 cup of Lite Greek Dressing, juice of 1/2 lemon, 1/3 cup red wine vinegar, 1tsp salt, 1 tsp pepper (add additional seasoning to taste)
1 heaping cup is 7 points but— if you add in more veggies and chicken/and it makes more servings points will reduce. This recipe as is makes 10 7 point servings. We ate it warm when it was ready but it’s intended to be eaten as a cold pasta salad — the easiest best recipe to take to work or on the go 😋 tag me if you make it!!!
