Cheesy Lasagna I’ve made many low carb lasagnas over the past three years but this one is the best by far!! RECIPE - Makes 8 pieces INGREDIENTS: 2 Cutdacarb flatbreads 2 cups shredded mozzarella cheese 1 lb ground Italian sausage 2 cups low carb marinara sauce 1 egg 1/2 cup ricotta cheese 1 tsp Italian seasoning 6 slices provolone cheese 1/4 cup grated Parmesan cheese 1/2 tsp oregano 1/2 tsp parsley STEPS: 1. Preheat oven to 325 degrees Fahrenheit. 2. Cut 2 Cutdacarb flatbreads in half and lay them on a parchment lined pan. 3. Top them with 1 3/4 cups of the mozzarella cheese. 4. Bake them for 5 minutes, remove them from the oven and then turn the heat up to 375. 5. Scramble 1 lb of ground Italian sausage, drain the excess grease and then stir in the marinara sauce. 6. In a bowl, mix together the ricotta cheese, egg and Italian seasoning. 7. Grease a 9x13 baking dish and spread a small about of the marinara mixture in the bottom. 8. Layer two cheesy noodles, half of the ricotta mixture, half of the sauce mixture, provolone cheese, remaining noodles, ricotta mixture & remaining sauce mixture. 9. Top it with the remaining mozzarella cheese, Parmesan cheese, oregano and parsley. 10. Bake at 375 degrees F for 20 minutes. If you don’t want to use corned beef, they’re also delicious with Turkey. 🙌🏼😋 This recipe calls for my Sugar Free Thousand Island Dressing which can be found along with the Reuben recipe in my new cookbook! ❤️ www.Kristyslifestyle.com RECIPE - Makes 6 INGREDIENTS: 3 Cutdacarb flatbreads 1 lb corned beef, chipped 6 Tbsp sugar free thousand island dressing👇🏼 12 slices of baby Swiss cheese 1 cup sauerkraut avocado oil STEPS: 1. Working with just 1 flatbread at a time, lay it horizontally on your work surface. 2. On the long side closest to you, add on 3 slices of Swiss cheese side by side. 3. Using a slotted spoon, add about 1/3 cup of sauerkraut on top of the cheese followed by 2 Tbsp of thousand island. 5. Next add on 1/3 of the corned beef. 6. Roll it up tightly and then cut it in half. 7. Repeat two more times. 8. Heat a skillet over medium heat and add in a couple tablespoons of avocado oil. 9. Crockpot Chicken Enchilada Casserole -1 lb chicken breast -19 oz red enchilada sauce -10 oz diced tomatoes/rotel -1 tbsp taco seasoning -1 cup black beans -1 cup frozen corn -3 @cutdacarb flatbreads, cut into wedges -1 cup reduced fat Mexican cheese Add chicken, enchilada sauce, diced tomatoes and taco seasoning to crockpot. Cook on high 3-4 hours. Once cooked, shred chicken. Add black beans and corn and 1/2 of cheese. Cut flatbreads (or tortillas) into wedges and add to crockpot. Stir and add the rest of cheese on top. Cover and cook another 15 mins to let cheese melt. Pull Apart Chicken Tacos This was a fun and different way to eat a taco and oh so delicious!! I always use my homemade taco seasoning which can be found on my page and in all of my cookbooks & meal plans. This recipe also calls for my homemade salsa which is also in my cookbook and meal plans. www.Kristysketolifestyle.com/shop RECIPE - Makes 28 pieces INGREDIENTS: 4 large chicken breasts 1 cup chicken broth 4 Tbsp homemade taco seasoning 8 oz cream cheese 1 cup homemade salsa 4.5oz can of green chiles 1/4 cup shredded Colby Jack cheese 1/4 cup shredded mozzarella cheese 4 Cutdacarb flatbreads DIRECTIONS: 1. Pressure cook the chicken, broth and taco seasoning for 12 minutes on high. 2. Do a quick release and then transfer the chicken to a mixer and shred it. 3. Add in the cream cheese, green chiles and salsa and mix until combined. 4. Working with just one flatbread at a time, lay it horizontally on a cutting board. 5. Place 1/4 of the chicken mixture all along the edge closest to you. 6. Roll it up tightly and then cut into 7 equal pieces. *If you place the rolls wrapped in Saran Wrap in the fridge for 20-30 min, they will cut easier. 7. Repeat with the remaining flatbreads and chicken mixture. 8. Grease a springform or pie pan and then place the pieces upright in the pan. 9. Top with the shredded cheeses and bake for 20 minutes. 10. Remove the outer layer of the springform pan and enjoy!
