Dumb Dinners, Episode 23: Lazy Meatball Lasagna What you’ll need: 1 jar marinara sauce (24–25 oz) 1¼ cups water 8–10 oven-ready lasagna noodles, broken into pieces 1 cup whole milk ricotta 2 cups shredded whole milk mozzarella, divided 20–25 frozen fully cooked meatballs (½ oz) 1 cup frozen chopped spinach 1 tsp Italian seasoning ½ tsp garlic powder Pinch of salt How to make it: Mix marinara, water, ricotta, and seasonings in a 9x13 dish Add broken noodles, frozen meatballs, spinach, and half the mozzarella Stir everything together and press noodles down into the sauce Top with remaining mozzarella, cover tightly with foil Bake at 375°F covered 45–50 min, uncovered 10–15 min Rest 10 min before scooping Dinner so easy it’s kinda dumb. 🤌 #easymeals #dinneridea #easydinners #easyrecipes #easyrecipie

Anyone else OBSESSED with krispy tacos recently 🌮 🤗 Ingredients • 450–500 g chicken thighs or breasts, thinly sliced • 1½ tbsp olive oil • ½ onion, finely chopped Seasonings (added in pan): • 1½ tsp chili powder • 1 tsp smoked paprika • 1 tsp cumin • ½ tsp garlic powder • ½ tsp salt (adjust to taste) • ¼ tsp black pepper • Juice of ½ lime Cook the Chicken 1. Heat a pan over medium-high heat with olive oil. 2. Add the chopped onion and sauté 2–3 minutes until softened and slightly golden. 3. Add the sliced chicken directly to the pan. 4. Sprinkle all seasonings evenly over the chicken. 5. Toss well and cook 5–7 minutes, stirring occasionally, until: • chicken is cooked through • edges are lightly browned • onions are caramelized 6. For the past few years, I’ve committed to eating more veggie and proteins dinners, skipping out on potatoes, rice, and pasta during the week. Since veggies take up majority of my plate, I like to make them with extra love and flavor so I’m not missing the side dishes I choose to not include. Friendly side note: I know that carbs are not bad but this is a dinner routine that works really well for me. Because for me, I like minimal or no chopping, one pan, no more than 5 minutes of prep work, and one dish to clean 👏🏼👏🏼👏🏼 dumb dinner episode 19: french onion crunch chicken Ingredients 2 lbs boneless, skinless chicken thighs (leave whole) 1 container of premade french onion dip ½ tsp dried thyme ½ tsp kosher salt ½ tsp black pepper 1½–2 cups shredded gruyère (mine had Swiss cheese in it too) 1 cup fresh green beans (trim with scissors) 1 cup potato chips, crushed 1 cup french fried onions instructions preheat oven to 375°. lightly grease a 9x13 baking dish. pat chicken thighs dry with paper towels. lay chicken in a single layer in the dish. sprinkle thyme, salt, and pepper directly over the chicken. spread the french onion dip over the chicken like frosting. scatter green beans around and between the chicken. top everything with shredded gruyère. bake uncovered for 35–45 minutes, until chicken reaches 165° internally. remove from oven and sprinkle crushed potato chips + french fried onions over the top. return to oven for 8–10 minutes, until golden and crispy. let rest 10–15 minutes before serving so it thickens. #familydinner #dinneridea #easydinners #easydinner #easyrecipes

A big bowl of comfort 🤗 … aka: Crispy Chicken w/ Creamy Cheddar Noodles ✨ I hope y’all enjoy 😉 ◽️Creamy Cheddar noodles ✨ recipe by @thedailykale ✨ - 1 cup shredded cheddar - 1/4 cup Parmesan - 1 tbsp each of onion and garlic, chopped - 1/4 cup -1/2 heavy cream - Heavy pinch of: garlic powder, paprika, pepper, salt and oregano - Noodles, I used Udon - Broccoli, steamed -Sauté garlic and onion in a little oil. -Add in heavy cream and spices and stir. -Add in cheeses and stir. -Let it thicken on a low heat then add in your steamed broccoli and noodles and stir. ◽️Chicken: 1/2 pound Chicken Spices: Paprika, Black pepper 1/2 tsp Garlic powder 1/4 cup bread crumbs 1/4 cup parmesan Pinch of salt -In a bowl toss cut chicken with a little oil and add the rest and stir until coated. *If parmesan isn’t fully sticking to the chicken pieces then you need to add a little more oil and stir around again until it sticks. -Air fry chicken at 380 for about 10 minutes. Or until 165 internal temp is reached. -To serve place in a bowl and top with your crispy chicken and garnish with some chili flakes for a little extra kick 😉 #easydinner #dinnerrecipe #dinneridea

Preheat oven to 400°F. 2. In a 9x13 or similar baking dish, add: • orzo • warm chicken broth • cream • garlic • lemon juice • salt, pepper, Italian seasoning 3. Add in the chicken thighs and spinach, making sure the orzo is mostly submerged. 4. Drizzle olive oil over the chicken. 5. Cover tightly with foil and bake 30 minutes. 6. One Pot Spaghetti (Easy One Pot Pasta Dinner) This one pot spaghetti is a perfect weeknight comfort meal that you will want to make again and again. 🤍 Tip: Do NOT use a full box of pasta. There isn’t enough liquid for it to cook properly. Stick to ¾ lb spaghetti for the perfect texture and sauce. Ingredients: 1 lb ground beef 1 lb sweet Italian sausage ½ onion, diced 1 bell pepper, diced 1 tbsp minced garlic 28 oz crushed tomatoes 1 tbsp Worcestershire sauce 1 tbsp tomato paste 3½ cups chicken broth ¾ lb spaghetti noodles 2 tsp Italian seasoning 1 tsp each onion powder, salt, and sugar Directions: 1. In a large skillet, add a little oil, diced onion, and bell pepper and sauté until softened. 2. Add ground beef and Italian sausage. Cook until browned and fully cooked. Drain excess grease if needed. 3. Stir in minced garlic, crushed tomatoes, Worcestershire sauce, tomato paste, Italian seasoning, onion powder, salt, and sugar. Stir well to combine. 4. Pour in the chicken broth and bring everything to a boil. 5. Add the spaghetti noodles (break them in half if needed) and press them down into the liquid. 6. Reduce heat slightly and let the pasta cook uncovered, stirring occasionally so nothing sticks. 7. Continue cooking until the noodles are tender and the sauce thickens to your liking. 8. Let sit for a few minutes to thicken, then serve warm.
