THDhekia haak or fiddlehead ferns. It is a northeastern favourite found in the wild and is cooked in a variety of ways, as a salad, but most often as a vegetable. So here’s a recipe of dhekia haak with Gahori/pork.
Coming to the recipe, I’m preparing Gahori which is an absolute favourite combo with ferns.
First wash and dry the fern in shade.
Now cut the tough part of the fern and keep the only tender parts. Now copped them finely.
I’m cooking the meat till it releases its oil.
After that I’m adding onion, ginger, garlic, haldi and salt .
Finally I’m adding Dhekia haak and cooking it for 5-7 minutes in medium flame and it’s ready.

For those who forage them in the wild, please remember:
To ensure sustainability, foragers should harvest in moderation, leaving enough fiddleheads to mature into fronds and allow plants to regenerate. 🌿✅
Fiddleheads are only edible during their early stages of growth, so the harvest only lasts a short time in each area before the plants become too large. 🤫
They should be harvested shortly after they emerge from the ground, while still tightly coiled and before the fronds unfurl. ✂️
Even though all ferns produce fiddleheads during early stages of development, not all fiddleheads are safe to eat. While there are more than 10,000 species of ferns, the one most suitable for eating in the United States is the ostrich fern (Matteuccia struthiopteris). ✅
Other edible varieties:
✅ Cinnamon Fern (Osmunda cinnamomea)
✅ Lady Fern (Athyrium filix-femina)
How to cook fiddleheads:
Bring a large pot of salted water to a boil. Cook fiddlehead ferns in the boiling water until barely tender, 7 to 10 minutes. Drain.
Heat olive oil in a large skillet over medium-high heat. Stir in prepared fiddlehead ferns, garlic, salt, and pepper. Cook and stir until ferns are lightly browned and tender, about 5 minutes. Remove from heat and sprinkle with lemon juice. 👌
Fiddleheads taste a bit like asparagus, broccoli, spinach, or green beans with a hint of nuttiness. They are prized for their delicate flavor and crunchy texture. 😋

Also called fiddlehead fern and kasrode in some areas and dhekia xaak in Assam.
Another superfood from the Uttarakhand or the hilly areas of the north and northeast. This vegetable found during monsoon tastes like heaven.
Recipe 🌶🌶
Ingredients 🌶
🌶Lingde:500 gm
🌶Onion sliced medium :4
🌶Garlic chopped:10 to 12 cloves
🌶Whole red chillies:2
🌶Haldi powder:1 Tsp
🌶Salt according to taste
🌶Mustard oil:2 Tbsp
Method 👩🍳👩🍳
🌶Chop the lingde like shown in the video
🌶Slice the onions and chop the garlic.
🌶In an iron kadhai take oil, add jakhya and let it crackle,add whole red chillies and chopped garlic.Let the garlic turn light brown and then add sliced onions.Cook the onions till they are light brown.
🌶Add chopped lingde and stir fry, add salt and haldi powder and keep stirring it for 7 to 8 minutes.
🌶The lingde ki sabzi will be ready in 7 to 8 minutes.

BAFiddleheads. Easily my favorite vegetable. Grew up picking these along the river on the border of Connecticut/Massachusetts. We would come back with 4-5 huge military style duffle bags full! My parents would clean them in a large kid pool in the yard, ha. We would have enough to give away and eat as a side for dinner all winter. That’s a lot of fiddleheads! AND in true frenchie fashion we never gave up our location because god forbid a family member went before us and picked them all. (yes, I am a french girl) I witnessed a lot of family full on nasty fights because my dad wouldn’t reveal his location. We would get there before sunrise with our flashlights and a cooler of food and drinks. Pick all morning and into early afternoon. It was a long ass day as a kid.
So this is how I clean my fiddleheads. I am not saying this is the only method either. It’s the way my grandparents and parents did it. Therefore, it’s how I do it.
Here’s the rime consuming breakdown but I promise it is well worth it.
1.. Start by filling up a large bowl with the fiddleheads and fill with cold water. I let the water run and swish them around with my hands to remove the dirt and debris. Empty the water and repeat about 4 times.
2.. Next fill with water again and grab a handful of fiddleheads and look and see if there is any debris left especially around the head part. Snap off any brown or broken edges and put in a large strainer. Once they are cleaned, run the water through one more time and completely strain all of it out.
3. Bring a large stock pot full of water to a rolling boil. Add in the fiddleheads and boil about 3 minutes. After the 3 minutes, drain the water and throw the fiddleheads in an ice bath. Once they are cooled down and drained, dry them out on a towel and pat dry with paper towels. I then add them into doubled up freezer safe bags to use for future meals.
I will share how I prefer to eat them in the next few weeks. It’s simple but very good. Some chefs get really funky with fiddleheads and I think it’s a shame. They are masking the real flavor.
