Scones sometimes get a bad rap.. too dry, crumbly or tasteless… I have been testing scone recipes for about a year now and I have to say they are my favorite baked good right now. I try one at every coffee shop or bakery we go to and I may be biased but I like mine better😅 I have come to the conclusion that there are 5 essentials for a scone to turn out good, and if you do these your scones will be amazing. 1️⃣Buttermilk- Always use real buttermilk. Some recipes call for heavy cream or sometimes you “make your own buttermilk” with milk and vinegar.. I’ve tried them all but when I use real buttermilk the flavor and texture are better. Probably because the acid in buttermilk weakens the gluten formation and helps keep the crumb soft and tender and it adds a subtle tang and depth of flavor. 2️⃣Butter- Use butter straight from the fridge. Grate it with a cheese grater to have uniform pieces and so you touch the butter as little as possible. 3️⃣mixing-mix gently until the liquid is all combined, yet the dough is still quite shaggy. Then dump it on the counter and mix it till it just barely is sticking all together. Over-mixing will result in dense, hard and crumbly scones. 4️⃣Layer- to get all the layers in a scone you need to stack your dough. I chop it into quarters and smash it down to the thickness I need before cutting into triangles. 5️⃣Freeze- this step is so important. After shaping your scones you HAVE to freeze them for at least 20 minutes. Cold dough holds it shape. If you want a flaky, layered, tall scone, freezing is the trick. It also freezes the butter so when the butter hits the hot air in the oven it releases steam causing steam pockets which make the amazing flaky layers. No more flat pancake scones. REXIPE: Here is my base recipe that I use in all my scones. 2 1/4 cup flour 1/2 cup sugar (emit if doing a savory scone) 1 Tbsp baking powder 1/2 tsp salt 1/2 cup butter 1/2 cup buttermilk 1 egg 1 tsp vanilla (emit if doing savory) 1 cup add ins ( whatever flavor your heart desires) Directions in pinned comment⬇️

The best homemade scones✨ recipe makes 15✨ Ingredients Self raising flour - 675g Baking powder - 3tsp Pinch of salt Sugar - 80g Softened butter - 150g Milk - 250-450ml Beaten egg - 1 Method Sift together all the dry ingredients. Then add the room temp butter and rub into the dry ingredients to make a fine breadcrumb consistency. Next you want to add the milk a little at a time, slowly forming a dough. When you have the right consistency you can stop adding milk. Leave to rest for 10 minutes before rolling (if you have time). Now roll out the dough on a lightly floured work surface until 2cm thick ( don’t over work the dough and only roll lightly) and then fold the dough over in half to make it roughly 4cm. Using a 6cm pastry cutter - cut the dough and make 15 scones (try not to twist the cutter). Brush each scone with the beaten egg making sure you only do the top! (if you want a matt finish dust with some flour). Lastly place the scones on a lined baking tray and bake in the pre-heated oven for 15 minutes 200fan. #scone #sconerecipe

this is the easiest scone / bread roll recipe and you only need 2 main ingredients… 👩‍🍳 RECIPE 👩‍🍳 1 cup self rising flour (or 1 cup plain flour + 1 tsp baking powder) 1/2 cup Greek yoghurt 1 egg (beaten) - this is optional. You can use it to get the rolls to turn brown. All you need to do is combine all the ingredients together (I added chocolate chips), then form medium sized balls and bake at 350F for about 15-20 mins. 🫶 Serve warm and enjoy! 🏷️ #bakinghacks #easybaking #scones #breadmaking

It has everything you love about a classic scone - golden crumb, juicy strawberries and a light sugar crust . . . but in a simple sliceable loaf. Perfect served warm with clotted cream for a cosy spring bake. �Serves: 8–10�Tin: 2lb loaf tin Ingredients 350g self-raising flour�60g caster sugar�½ tsp salt 90g cold unsalted butter, cubed 180ml double cream�1 large egg�1 tsp vanilla extract 180g fresh strawberries, chopped To finish�1 tbsp milk (for brushing)�1 tbsp demerara sugar Serve with�Clotted cream or whipped cream Jam (I used the Bonnie Maman Rhubarb and Strawberry - so good!) Method Preheat the oven to 180°C fan and line a 2lb loaf tin with baking paper. 1. In a large bowl mix the flour, sugar and salt. 2. Rub the cold butter into the flour using your fingertips until the mixture resembles coarse breadcrumbs. 3. Pour in the cream, egg and vanilla into the flour mixture and mix gently until a soft dough forms. 5. Fold the chopped strawberries through the dough. 6. Transfer the dough to the loaf tin and gently press into shape. 7. Brush the top with milk and sprinkle with demerara sugar. 8. Bake for 45–50 minutes until golden and cooked through. This is my favorite way to shape & store scone dough. I pour out the loose dough on parchment paper and shape it by pulling in the sides and pulling it all together to form a perfect disc. This helps not over mix the dough, perfect soft crumb, and keeps the butter frozen because less touches with my warm hands. Don’t worry, it sounds more complicated than it actually is. ⁠ ⁠ Here’s how to laminate your scone dough:⁠ 1. Turn the craggly mass of scone dough out onto your work surface.⁠ 2. Shape it into a rectangle.⁠ 3. Fold the rectangle in half like a piece of paper.⁠ 4. Flatten it out into a rectangle again.⁠ 5. Now fold it in half once more, but going the opposite direction. ⁠ ⁠ Try to shape half your scone dough using this trick and half without to compare the difference. Classic scones 💂🏼‍♂️🧸🇬🇧 Written recipe and measurements are also on the link on my profile 🫶🏼 Ingredients: 500g all purpose flour 1 1/2tsp baking powder 1/2 tsp salt 125g unsalted butter (cold) 10g vanilla sugar 90g sugar 180ml whole milk 1 egg yolk (to glaze) Instructions: Preheat oven at 200°C Mix together the flour, baking powder and salt Add the butter and rub the mixture between your fingertips Stir in the sugars Make a well in the centre and pour in the milk Mix well until the mixture becomes a beautiful dough Roll out the dough until it’s about 3cm thick Cut out the scones with a cookie cutter (6cm diameter) Transfers the scones to a baking sheet lined with baking parchment. Brush each scone with beaten egg yolk Bake at 200°C for 15 to 20min Transfer to a wire rack and let the scones cool for 10min #scones #afternoontea #afternoon #tea #sunday #baking #sundaybaking #dessert #weekend
