✅ Do this after 6 minutes- PARTIAL BAKE Expansion Score (find your ideal time between 5 and 7 minutes) Follow @bakingshots 💯Free digital products linked in my profile My dough is baking covered, opened just for this Single Slash - put the dough into the Dutch oven, closed - pull out between 5 to 7 minutes, uncover and score a single slash, middle part my favorite for this type of scoring - cover and return to oven for the remaining covered bake time and your normal uncovered finish ➡️ ALARM tips: On my phone I set an alarm for 6 minutes and an alarm for 20 minutes, at the start. After the 6 minute alarm, I score and stop the alarm. The second alarm will alert me when to uncover. Then I snooze it, 5 minutes at a time, until it's done. Made with my Classic Everyday Sourdough RECIPE ✅ Different from most recipes in that I mainly use all-purpose flour (not bread flour) and ✅ mix everything all together in one bowl at one time! ✅ These days I mix in a stand mixer love my stainless steel Bosch from @nutrimill (I've got a discount code for you) 🌾RECIPE: 400g All Purpose Flour 40g Whole Wheat [9%] 10g Spelt [2%] 350g room temp water [78%] 80g active starter [18%] 9g salt [2%] Morning ritual, along with brewing an equally paid attention to mug of quality organic no mold coffee or mushroom coffee (a new interest!) Satisfying daily meditation and practice, bread therapy and nourishing my family. Slow (er) food, fermented foods. Should You Score Deep or Shallow? Scoring isn’t just decoration! it’s how you control oven spring, crust bloom, and the final shape of your sourdough. 🔍 What Does Scoring Actually Do? It directs where steam escapes during baking. Without scoring, your bread may burst randomly or stay too tight. The angle, depth, and timing of your score all influence the final look and texture. 🌕 Deep Scores = Rustic, Wide Bloom ✔️ Better for high-hydration or tight doughs ✔️ Helps weak or under-proofed dough spring open ⚠️ But too deep? It can collapse or spread sideways 🌑 Shallow Scores = Elegant Ear & Control ✔️ Best for well-proofed, strong doughs ✔️ Creates tension for that sharp, curved “ear”. ⚠️ Too shallow or too late? Your loaf may stay tight or open unevenly 🔧 Tips for Better Scoring: ✅ Use a clean, sharp lame or razor ✅ Angle your blade ~30° for a proper ear 💡 Pro Tip: Fermentation plays a huge role in scoring success. That final rise in the oven — called oven spring — is your dough’s last push. Strong fermentation = strong structure = better bloom. Also, don’t forget your oven settings! Let’s score some pretty loaves in 2026! Wheat stalk designs are endless, it’s the simplest way to score your loaves, yet so beautiful!! A few tips… 💡Use super fine Thai rice flour for dusting 💡Use a new blade on your lane and cut it as I did in the video 💡Make tiny but deep cuts close together 💡Bake 5 min then cut the expansion score 💡To avoid the dusting flour from coming off while baking, eliminate steam. If using Dutch oven, don’t cover, if open baking, don’t add water or ice for steam. Most importantly, your bulk fermentation has to be on point. If the loaf is under proofed or overproofed, it won’t hold shape while you are scoring. #sourdoughloaf #breadscoring #sourdoughscoring #breadart

Scoring mid-bake helps guide the expansion and allows you to open up a tight or under-proofed score from earlier. It can give your loaf that ear and controlled bloom! I don’t do this every time, but when I do, it’s because I want to help the loaf open up more intentionally. Someone commented on a previous post that this loaf had a mohawk 😅 that’s a pretty ear for sure! I want you to keep in mind two things: 1. Getting an ear is not the goal. You can make perfectly delicious and beautiful bread without getting an ear. I personally find ears to be inconvenient, making the loaf difficult to cut. 2. I was out of blades for my favorite @wiremonkeyshop lame, so I used this kind of blade you see in my video, but having a proper lame helps score much more easily, so you can get an ear (or any design) consistently. Your dough should be cold straight from the fridge (never let it warm up). Use a sharp bread lame—dull blades drag and tear instead of slicing cleanly. Score top to bottom, about ½ inch deep, then tilt your blade and make a second pass to create a small flap. That little flap helps your loaf bloom beautifully in the oven for that signature ear we all love.❤️ It’s simple once you know what to look for…cold dough, sharp blade, confident cut.
