Why isn’t anyone talking about WHY we score bread? Scoring bread refers to making a cut in the surface of the dough right before putting it into the oven to bake. It is often done with a sharp razor blade called a bread lame but can also be done with a knife or scissors. ✂️ BTW - You can find my favourite @breadsmart lame in my Amazon storefront! The main reason we score bread is to control how the dough looks after baking. As the steam escapes from your dough in the oven your bread will rise. This is called the oven spring. When we score the dough we’re controlling where it opens up. Scoring your dough will affect the oven spring, crumb, and crust of your finished loaf. Without scoring you risk the crust setting too early and producing a bread that comes out a little gummy. Now - there are two types of cuts you can make in the dough. A functional score and a decorative score. The functional score is deep and allows the bread to open up. The decorative score is much shallower and gives the baker some creative control over the final look of their bread. And I need to know… which type of scorer are you — a functional one, a decorative one, or a mix of both? 99% of the time I just give my bread a single functional score. Nun habe ich mich das erste mal am Bread Scoring versucht und was soll ich sagen, das macht ja soooooooooo viel Spaß! Kleiner Hack für das perfekte Scoring Messer am Rande: Damit beim Scoring nichts im Weg ist, schneidet wie ich einfach den mittleren Teil der Klinge raus. So bleibt auch bestimmt nichts blöd im Teig hängen und zerstört euer Muster. How and why do you score bread? Let’s talk about scoring. Scoring takes place after your loaves are proofed and right before you bake. Scoring allows the bread to expand in a controlled and consistent manner when you bake it. Your loaf will expand rapidly in the first few minutes of your bake. A properly fermented loaf should open up nicely when you score it. I prefer to cold proof my loaves because it makes them much easier to score. The scoring possibilities are endless. You want to make sure you score enough to prevent your bread from cracking, but not so deep or much that you compromise the structural integrity of your loaf. Sometimes figuring this out takes practice and some trial and error. Here are a few tips for scoring your bread: -Make sure your blade is sharp -Use a continuous motion rather than sawing -The blade should meet your dough at about a 35-45 degree angle -The angle at which your blade meets the surface of the dough will impact how the loaf opens up to a certain extent -Your cut should be approximately 1/4”-1/2” deep. This will depend on the type of score you’re doing, for example, an expansion score versus a decorative score #sourdough #sourdoughbaking #bread #breadmaking #sourdoughstarter #breadmaking #scoring #scoringbread #scoringsourdough #sourdoughscoring
