Fresh Homemade Mozzarella Cheese 🧀 Two simple ingredients and under an hour is all it takes to make fresh mozzarella at home. It costs less than buying it, tastes way better than store-bought, and you already have everything you need at home right now. Follow along if you want to eat better while spending less. Ingredients • ½ gallon whole milk (make sure it’s NOT ultra-pasteurized) • ½ cup white vinegar • Optional: 1 tsp salt Instructions 1. Add the milk to a large pot and slowly heat it to 120°F (49°C), stirring occasionally so it doesn’t burn. 2. Take it off the heat, add the vinegar, and stir for about 30 seconds until curds form and separate from the whey. 3. Cover the pot and let it rest for 15 minutes. 4. Remove the curds and squeeze out as much liquid as possible. Mix in salt here if using. 5. Place the curds in a bowl and microwave for 30 seconds. Stretch and fold the cheese a few times until it’s smooth and stretchy. 6. Form into a ball and transfer to an ice bath for 15 minutes to firm up. #mozzarella #homemade

Apparently you only need 2 ingredients to make cheese at home! Here’s my attempt at making paneer cheese with some milk I bought on sale as it’s expiring soon! The making of an endangered cheese. Brie is one of the most popular cheeses in the world. But the mold behind the globe’s supply of this funky cheese could be in danger. In our latest video for @businessinsider we head to France and New Zealand to learn what’s going on with the fluffy white mold. First stop: New Zealand, where @whitestonecheeseco inoculates milk with white mold and adds rennet to curdle then milk. In this clip, the cheesemaker is cutting the curds. Mac and cheese starts long before it ends up in a blue box. The process begins with durum wheat, which is milled into semolina flour. Water is added to form dough, then pushed through molds to create the classic elbow macaroni shape. The pasta is dried slowly to remove moisture and lock in its structure so it won’t fall apart when cooked. The cheese sauce is a separate operation. Real cheese is melted, blended with milk solids, fats, salt, and stabilizers, then dehydrated into a fine powder. Removing the moisture allows it to stay shelf-stable for months without refrigeration. During packaging, the dried pasta and powdered cheese are portioned, sealed, and boxed at high speed. When you cook it at home, water rehydrates the pasta and milk or butter reactivates the cheese powder—turning two dry components back into creamy mac and cheese. It’s not magic. It’s food science. #howitsmade #foodfactory #macandcheese #foodscience #explainingtheprocess
