Do multiple coil folds (no waiting in between). Cover and rest 1½ hour. 2. On a floured surface, divide dough into 5. Shape each into a small ball and create surface tension by turning it in your hands. Dust with flour and rest 10 min. 3. Score each from the side, then lightly brush with water. 4. My Original No Knead No Touch Bread Ingredients: 3 cups bread, strong white or plain flour Tbsp yeast Tsp salt 1.5 cups warm water (ensure it’s not too hot) Method: Add all the ingredients to a bowl and mix until you have a wet, sticky dough. Cover the bowl with a tea towel and leave to rise for 1 hour. To help fasten this heat your oven to 50c whilst you mix then turn off and place the bowl inside the oven. It should now have doubled in size with bubbles on the surface. You can leave it longer if you wish. Preheat the oven to 230c. Using two spoons grab some of the dough and place it on to a parchment paper on a baking sheet. Repeat this to make 6 leaving a small space between them. If they touch it’s ok. Sprinkle on some flour and chia seeds. Add nuts or herbs too if you. Make a water bath by adding water to oven proof bowl or dish and place it on the lower shelf of the oven and place the baking sheet on the middle rack. Bake for 25mins or until nice and golden brown. Making your own whole wheat bread at home is this simple and easy!! and it’s completely preservative-free 🍞🌾 Ingredients: 260 g whole wheat flour (2 cups) 125 g all-purpose flour (1 cup) (Mix both flours or you can use just whole wheat flour too but with all purpose the texture and rise is much better) 200 ml warm water (3/4 cup) 70 ml warm milk (1/4 cup) 1 tsp sugar/honey (for yeast activation) 7 g instant yeast (2 tsp) 2.5 Tbsp brown sugar/honey (30 g) 1.5 Tbsp butter, softened (21 g) 1 Tbsp olive oil (15 ml) 1 tsp salt 1 tsp lemon juice Directions Sponge: Mix water, milk, 1 tsp sugar, and yeast. Let it sit for 10 minutes. Add 1 cup flour, mix well, and let it rest for 20–30 minutes. Dough: Add the remaining flour and all other ingredients, then knead for 5–6 minutes by hand or in a mixer on speed 2. The dough should be soft, slightly sticky, and not too neat. If it feels dry, add 1–2 tbsp water. Place it in a greased bowl and let it rise for 1–2 hours in a warm place. Shaping and Second Rise: Grease an 8- or 9-inch loaf tin. Gently shape the dough according to the tin size and place it in the pan. Let it rise again for about 1 hour, or until it is at least 1 inch above the rim of the tin.
