Add oats, frozen blueberries, chia seeds, lemon zest, cardamom, honey and milk into a pot or pan and stir 2. Bring to boil and let simmer for 5-10 minutes, stir frequently. The color depends on the blueberries you are using. I used frozen wild blueberries which break very easily when defrosted, so they give a great color. Let sit for 5 minutes so the chia seeds absorb some of the liquid 3. Does anyone else think ยฝ cup oats is just likeโ€ฆ not that much oatmeal? Okay same same. Whenever I make it per the package instructions Iโ€™m left wondering, thatโ€™s all I get!? So Iโ€™ve been making this extra voluminous oatmeal for years now. The trick is to use about 1 ยฝ- 2 times the amount of liquid as the traditional cooking method states. For most grains, the liquid-to-grain ratio is 2:1 but these oats like to make it 3:1. So, ยฝ cup oats (the serving size) plus 1 ยฝ-2 cups liquid. The extra liquid helps the oatmeal grow but we also donโ€™t like liquid-y oatmeal right? So thatโ€™s where the chia seeds come in. Chia seeds absorb liquid due to their hydrophilic nature, which helps to thicken and add texture to these oats. And bonus that chia seeds are a nutrition powerhouse with a whopping ten grams of fiber in one serving plus amazing heart-healthy omega-3 fatty acids. Oatmeal is pretty bland on its own so I love to flavor things up with cinnamon, maple syrup, a pinch of salt and a spoonful of vanilla bean paste (the key vanilla flavor here!) If you donโ€™t have vanilla bean paste you can use pure vanilla extract- but if you can swing it I think vanilla bean paste really does have better, bolder vanilla flavor. If you have access to Trader Joeโ€™s- snag the organic vanilla bean paste there, itโ€™s the best price! This has been my go-to oatmeal recipe for years and the versatility is endless because you can add any or all of your favorite toppings. 1 teaspoon butter ยฝ cup rolled oats ยพ cup water ยพ cup milk of choice 2 teaspoon chia seeds Pinch of salt ยผ teaspoon ground cinnamon 1 teaspoon vanilla bean paste (or vanilla extract) 1 tablespoon maple syrup or honey FULL RECIPE and instructions is on my blog!
