INGREDIENTS: 1 pound brioche loaf 1 15-ounce can pumpkin purée 1.5 cups evaporated milk ¾ cup half-and-half ½ cup packed dark brown sugar ½ cup granulated sugar 4 large eggs 2 teaspoons vanilla extract 1 teaspoon ground cinnamon ½ teaspoon freshly grated nutmeg ¼ teaspoon ground ginger ¼ teaspoon ground allspice ¼ teaspoon ground cloves ¼ teaspoon salt INSTRUCTIONS: 1. Cut the brioche loaf into 1-inch squares. 2. To a large mixing bowl, add the pumpkin, evaporated milk, half-and-half, dark brown sugar, granulated sugar, eggs, vanilla, cinnamon, nutmeg, ginger, allspice, cloves, and salt. Whisk well until smooth. 3. Add the bread pieces to an extra-large mixing bowl, and pour the custard over them. Gently toss to evenly coat the bread. Let it sit for 20 minutes. (Tip: If you have the time, allow the bread pieces to sit at room temp uncovered for a few hours so it soaks up the custard even better.) 4. Preheat the oven to 350˚F (180˚C). Grease a 9-inch square baking dish with nonstick cooking spray or butter. 5. Transfer the bread pudding mixture to the greased baking dish. 6. Bake for 50-55 minutes. Remove from the oven and allow to rest for 15 minutes before serving. 7. Serve warm with vanilla ice cream and salted caramel sauce, if desired but highly recommended! 8. Enjoy!

Soft, gooey layers packed with spiced pumpkin goodness, cinnamon, and a hint of sugar—all baked into pull-apart perfection.🎃🍞🍂✨ You’ll need: - Can of biscuits - 1 cup sugar - 1 tbsp cinnamon - 1 tsp pumpkin pie spice - 1/2 cup pumpkin puree - 1 stick of butter melted. Instructions: - Open the biscuits, and split in half so there are now 16 biscuit portions. - mix the sugar, cinnamon, & pumpkin spice in a shallow bowl, and melt the butter into another bowl. - Add pumpkin puree to separate bowl and add in 1-2 tbsp of the cinnamon sugar mixture to combine. - Dip each piece of biscuit in the butter, and then the cinnamon sugar until full coated. - Stack the biscuits on top of each other with about 1/2-1tsp of pumpkin puree between each biscuit and place sideways into a loaf pan. - Bake at 350 for 35-40 mins until baked through. Pumpkin spice Bread Pudding 1 loaf of 2 day old bread preferably Italian bread cut into 1 inch cubes 2 cups milk 3 large eggs 1 cup (207g) sugar 2 tbsp butter, melted 1 teaspoon vanilla extract 1 tablespoon pumpkin spice Cut up the bread into 1 inch square and set aside in a bowl. Add each ingredient one by one. In a stand mixer or hand mixer makes your eggs then, added sugar, with the pumpkin spice, butter, vanilla, and milk. When this is all mix poured into the bowl that the bread is in a mix with your hands or a spoon. Spray butter your 9x9 pan, Then add in your bread mixture place it on the in the tray and let it soak up the egg mixture for 25-30 minutes. Preheat your oven at 350° then place it in the oven for 50 to 60 minutes. Pour that delicious sauce right on top and enjoy. Sauce 1/2 cup butter 1 cup sugar 1/2 cup heavy whipping cream 1 teaspoon vanilla extract Over a medium he go ahead and heat up your butter until it melted, then add the sugar and heavy whipping cream. Once it comes to boil bring it down and add the Vanilla. To make it you will need an 8-9 inch springform tin. 300g soft brown sugar 300g pecan halves - toasted, cooled & very roughly chopped. 300g soft brown sugar 1 tsp pumpkin pie spice 2 tsp cinnamon 50g melted butter For the custard 200g pumpkin puree 300ml double cream 100ml milk 3 large eggs Pinch flaky sea salt Tsp vanilla extract 1 tsp pumpkin pie spice 1 tsp cinnamon 50g demarera sugar or granulated 1 x 500g brioche loaf (you can also use the little breakfast rolls) Set the oven to 150c fan First prepare First prepare the pecan filling. Add the pecans, brown sugar, spices to a bowl, stir then add the melted butter and stir again until everything is coated, set aside. In a large bowl, add all the custard ingredients and whisk till smooth. Line your tin with baking paper- can be quite rough, don’t worry about being precise. Cut up the brioche loaf into small chunks, the. Use half to fill the tin just under half way, give a gentle press down but don’t squash it flat. Spread half of the pecan filling over the bread, then add the remaining half of the brioche. ( depending on your tin size, if it’s too full, you don’t have to use all the brioche.) Whisk the custard again to make sure the sugar isn’t sitting at the bottom of the bowl. Start pouring ontop of the bread pudding, it will fill to the top quickly, wait and allow the brioche to absorb it, then pour more ontop until it’s all in. Add the final layer of pecan filling ontop, place in the oven for 45-50 minutes. It will puff up significantly then reduce back down again. You can eat this the same day once cooled down significantly. But I recommend allowing it to cool fully so it sets, then reheat it in the microwave the next day as and when you want a slice. brown butter pumpkin bread w a salted maple brown butter glaze!!! 👼🍂🍞🍁 so good, moist, pillowy, and spiced 🫶 brown butter pumpkin bread recipe: 190g brown sugar 90g white sugar 15oz pumpkin puree— a can 2 large eggs 100ml whole milk 30ml brown butter 80ml neutral oil ~1 tbsp vanilla paste and/or extract ~1/4 - 1/2 tsp salt, adjust to taste 240g all purpose flour 1/2 tsp baking soda 1-2 tsp pumpkin spice, adjust to taste salted maple brown butter glaze: 25g brown butter 50g maple syrup 50g powdered sugar salt & vanilla extract milk Brown your butter and let it cool, measure out 30ml. Combine all of your wet ingredients together, ideally all ingredients should be around room temperature. Sift all of your dry ingredients together over the wet ingredients. Whisk everything together until combined but don’t overmix the batter or it’ll be dry. Prep baking tin with brown butter (genius isn’t it) before pouring batter into tray. Bake in a preheated oven at 350f for ~40 to 45 mins. Check often around the 40 min mark by sticking a toothpick in and very little sticks to it. for the glaze i typically just eyeball everything LOL about 1 part of brown butter with 2 parts both of maple syrup and powdered sugar, add a splash of milk until desired consistency, vanilla and salt. Let it cool in the pan for 15 minutes and pour the glaze on while it’s still slightly warm, this will make sure it stays moist notes: Pumpkin Puree: I use Libby’s pumpkin puree (@libbyspumpkin) If using other pumpkin puree brands make sure the texture is correct, I’ve found most other brands are liquidy so I’d place the puree in the middle of a paper towel and gently squeeze out some of the water until the right consistency then measure it Salt: I like adding the salt in with the wet ingredients and then tasting to see if I like it and adjust from there. BUT it is still uncooked batter in it so if you get sick doing this don’t quote me 👼😘 keep this wrapped in the fridge so it stays moist and allow it to come to room temp again (or warming it up) before eating! #pumpkinbread #recipe #baking #fall #homecafe
