Thanksgiving Series: Fluffy & Buttery Pumpkin Shaped Bread Rolls 🎞⏲ Why make basic bread rolls when they can be shaped as pumpkins 🫂 Recipe: Yeast mixture: - 1 cup warm water - 2 1/2 tsp active dry yeast ( 8 grams) - 1 tbsp sugar (12 grams) - 3 1/2 cups all purpose flour (528 grams) - 1 egg (whisked) (50 grams) - 1/3 cup sugar (70 grams) - 2 tsp salt (16 grams) - 1/4 cup room temp unsalted butter (54 grams) Instructions: - Mix together your yeast mixture and let it rest for 10 minutes - After 10 minutes, Add in the rest of your ingredients (besides your butter) and mix until roughly incorporated (for about 5 min) - Once roughly combined, add in your room temp butter and knead your dough for 10 minutes (it will take a little while for your butter to knead into your dough *scrape down the sides of your bowl as needed) - Add your dough to an oiled bowl and let rest for 1 hour in a warm place - After 1 hour, add your dough to a lightly floured or oiled surface and separate into 10 mini dough balls - Cut string (regular sewing string) into 4 pieces for each dough ball (long enough to tie around your dough) Place your dough ball “pretty” side down, and continue to tie each piece separately until you have a cute little pumpkin with 8 “ribs” - Once you’re done tying each pumpkin, allow them to rest for an additional 10 minutes - Add to a prepared baking sheet, brush on some egg wash (1 egg+ 1 tbsp water) and bake at 350°f for 10-15 minutes (or until your pumpkins are beautifully golden in the bottom and top! (Each oven preforms differently so keep your eye on them) - Carefully cut the strings out with scissors (be gentle) after they’re baked & brush with butter! * I used cinnamon sticks for the stem* - And you’re done 🤎 (If you’d like you can top them with a honey glaze, garlic butter, or honestly anything you’d like them to taste like!) #freshrolls #freshbread #recipeoftheday #explore #foodblogger #bakingfromscratch #thanksgiving #thanksgivingdinner #appetizers #aesthetic

Pumpkin Shaped Bread 🎃 🍂 Ingredients 390ml (1 2/3 cups) warm water (this is slightly less than my focaccia dough recipe just so it’s easier to shape). If it’s too dry, gradually add more water until the dough looks like mine in this video! 1 teaspoon (5g) honey, sugar or agave 1 Tablespoon (15ml) extra virgin olive oil 1.5 teaspoons (6g) instant yeast 500g (4 cups) white bread flour 2 teaspoons (10g) fine sea salt Method Mix dough. Wait 15 mins. Stretch + fold. Stretch + fold. Cover and proof at room temperature for 1.5 hours. Preheat oven with cast iron pot inside - 250C/480F. Arrange butchers string on top of nonstick parchment paper as shown in the video. Shape the dough into a ball, place on top of the string and then rest (covered with bowl) for 30 mins while the pot preheats. Tie the strings, cut excess off. Score each segment of the pumpkin, bake with lid on for 40-45 mins. Cast iron pot or Dutch Oven should be at least 4.7 litres/ 5 quarts. Bigger than this is great too… If you don’t have a cast iron pot, you can bake this bread on a baking tray. Just be sure to put a baking dish with hot water in the bottom of the oven as it preheats. Additionally, you can get a spray bottle and spray a few good pumps of water into the oven before closing the door for the bread to bake. The steam helps the bread to rise to its full potential before the crust forms. Bake the bread at 220C/430F for 30 minutes and then turn the temperature down to 210C/410F and carefully remove the hot water steam source from the oven. Continue baking for another 10-15 minutes or until the bread is golden brown and sounds hollow when you tap the bottom of it. #pumpkinbread #pumpkin #baking #breadmaking #bread #fallrecipes #fallbaking

Sourdough Pumpkin . This season last year was when I baked my first sourdough and I was enchanted by the beautiful pumpkin shaped bakes all over my feed. Honestly, I was too intimidated as a beginner to even give it a try. But I couldn’t resist and baked a few. I still remember the thrill and excitement of pulling out a bake that on major part looked like a pumpkin 🥰 Moral of the story: This bake looks intimidating but comes out beautiful no matter what level of baking experience you have. leaves and pumpkins are the most gorgeous and most forgiving scores to try on SD. * I learned the hack to oil the twine by the very talented @breadbyelise and it was a total aha moment for me. Recently, @sourdoughgram has shared very helpful tips on making pumpkin SD and @oakcitysourdough has made a very beautiful and intuitive tutorial that you must check out. * Oiling the twine prevents sticking and makes it easier to pull out without damaging the surface and destroying it’s beauty. * Remove excess oil with a paper towel to keep the brightness of the rice flour and score intact. * You can use 3 or 4 strings of ties based on your preference, size of loaf or type of score and keep it long enough to go around circumferentially and still has plenty of room to make ties. Mine was 4 strings about 30” long. * Keep the ties just snug enough but not too tight to give some room for expansion. * Make few deeper scores on each segment to prevent bursting or uneven expansion of the segments * And finally, no matter how you make it, it is still going to come out as a very gorgeous and delicious bake 🎃🥰 . . . brown butter pumpkin bread w a salted maple brown butter glaze!!! 👼🍂🍞🍁 so good, moist, pillowy, and spiced 🫶 brown butter pumpkin bread recipe: 190g brown sugar 90g white sugar 15oz pumpkin puree— a can 2 large eggs 100ml whole milk 30ml brown butter 80ml neutral oil ~1 tbsp vanilla paste and/or extract ~1/4 - 1/2 tsp salt, adjust to taste 240g all purpose flour 1/2 tsp baking soda 1-2 tsp pumpkin spice, adjust to taste salted maple brown butter glaze: 25g brown butter 50g maple syrup 50g powdered sugar salt & vanilla extract milk Brown your butter and let it cool, measure out 30ml. Combine all of your wet ingredients together, ideally all ingredients should be around room temperature. Sift all of your dry ingredients together over the wet ingredients. Whisk everything together until combined but don’t overmix the batter or it’ll be dry. Prep baking tin with brown butter (genius isn’t it) before pouring batter into tray. Bake in a preheated oven at 350f for ~40 to 45 mins. Check often around the 40 min mark by sticking a toothpick in and very little sticks to it. for the glaze i typically just eyeball everything LOL about 1 part of brown butter with 2 parts both of maple syrup and powdered sugar, add a splash of milk until desired consistency, vanilla and salt. Let it cool in the pan for 15 minutes and pour the glaze on while it’s still slightly warm, this will make sure it stays moist notes: Pumpkin Puree: I use Libby’s pumpkin puree (@libbyspumpkin) If using other pumpkin puree brands make sure the texture is correct, I’ve found most other brands are liquidy so I’d place the puree in the middle of a paper towel and gently squeeze out some of the water until the right consistency then measure it Salt: I like adding the salt in with the wet ingredients and then tasting to see if I like it and adjust from there. BUT it is still uncooked batter in it so if you get sick doing this don’t quote me 👼😘 keep this wrapped in the fridge so it stays moist and allow it to come to room temp again (or warming it up) before eating! #pumpkinbread #recipe #baking #fall #homecafe

How to make pumpkin shaped buns: • Divide the dough into 8x90g pieces and shape them into rounds. • Dip 8 pieces of oven-safe cotton string in neutral oil and wrap it around each dough ball to divide it into eight sections.
