These are a classic. I can’t count how many times I have prepared these in my life, but they are a must in my pantry. Unlike normal rye bread, they are very quick to prepare as you don’t need to let it rise and they last you so long! It’s the kind of recipe you make once a week and thank yourself everyday for it. Good for snacking, for a quick lunch, breakfast, literally any moment. 🧇 RYE CRISP BREAD - A Scandinavian classic Makes 3 sheets about 30 pieces of crispbread 50 ml extra virgin olive oil 30 g linseed 30 g sesame seeds 75 g rye flakes 150g stone ground rye flour 125g plain wheat flour 10 g salt ½ tsp anis seeds (optional) 3-4 tbsp olive oil Add 400 ml water in a mixing bowl, add salt, flakes, sesame seed, linseeds, mix then add oil and mix. Now add the two flours and mix again. Cover and leave to rest 1 hour. Preheat the oven to 160°C Spread the dough out baking parchment paper on a baking tray 30 x 40 centimetre. Bake for 5 minutes, then take the crisp bread out and cut the crips bread into the size you would like, I do about 10 pr tray. Place back in the oven and bake for 30 minutes and take out again brush with olive oil and bake again for 10 more minutes or until golden brown. Cool on a wire rack. When cold store in airtight container and they last for up to 3 weeks. Serve with goat cheese and honey or avocado, for breakfast or snacks with humus or lunch other toppings.

Knekkebrød: Norwegian Crisp Bread Today, I am sharing one of my favorite crisp bread recipes: Knekkebrød (also known as Norwegian crisp bread or Norwegian crackers). These crisp breads are full of whole grain and seed goodness, and are earthy, salty, toasty, and nutty, with the perfect crispness. I love to eat these crisp breads/crackers with hummus, cream cheese, avocado, or sometimes, just plain. These are truly addictive!! Recipe (makes 15-20 large crackers) Ingredients: 🤎 1/2 cup rye flour 🤎 1/2 cup quick cook oats 🤎 1/2 cup sesame seeds 🤎 1/2 cup sunflower seeds 🤎 1/2 cup flax seeds 🤎 1/2 cup pumpkin seeds 🤎 2 Tbsp chia seeds 🤎 1 tsp salt 🤎 1 tsp Italian seasoning 🤎 4 Tbsp oil (I used avocado oil) 🤎 11/4 cup boiling water Method: 🤎 Preheat oven to 275F and line an 11x17 baking tray with parchment. Brush (or spray) the parchment with some oil. 🤎 In a large bowl, take rye flour, oats, sunflower seeds, sesame seeds, flax seeds, pumpkin seeds, chia seeds, salt, Italian seasoning, oil, and boiling water. 🤎 Mix well and keep it aside for about 5 minutes. 🤎 Spread it evenly on the parchment lined baking tray. Make sure you cover the whole tray. 🤎 Bake for approximately 85-90 minutes, rotating the baking tray around half-time mark of baking. 🤎 Remove from oven and let stand untouched for at least 30 mins or till the crisp bread cools down. 🤎 Break into pieces and store in an airtight container. Speedy simple and so delish rye seed crackers also known as Swedish crispbread (knäckebröd)😋 A store cupboard Scandinavian essential and my fav cracker recipe to date👩🏼‍🍳 Hope you enjoy too!💛 Rye Seed Crackers (Makes approx 10/12 crackers) -115g rye flour -3g salt -1/2tsp baking powder -25g rolled oats -50g mixed seeds -30g flaxseed -35ml olive oil -90ml water (or add a little more if too dry) 1. Begin by preheating the oven to 200C 2. In a mixing bowl combine the flour, baking powder salt, seeds, oats, flax (dry ingredients) and mix to combine. Then add in the liquid ingredients being the water and olive oil 3. Mix to form a sticky dough (add a touch more water if needed) 4. Tip the dough into a piece of baking parchment and then sandwich it between another piece of baking parchment 5. Roll out the dough between the parchment until desired thickness (I usually opt for 1/2-3/4cm) 6. Remove the top layer of parchment and then cut the dough into approx 10-12 crackers 7. Poke the top of each cracker with a fork to allow air in whilst baking 8. Place the crackers on a baking tray and bake for 20/25 mins until golden and fragrant 9. Remove the crackers from the oven and allow to cool before eating 10. (Think rye, wheat, oats and barley!) ⁠ ⁠ To make the blue cheese spread: blend and whip ½ pound of blue cheese and ½ cup of olive oil with salt and pepper till all incorporated and creamy. For the hot honey: make your own by warming up honey (1/2 cup) and infusing chili flakes. (We’re using 1 tablespoon, but if you don’t like it as spicy, half that!) Season with salt and bring to a simmer, remove from heat and cool. By popular request, this is my favourite bread recipe. Bread is one of the most widely eaten foods on the planet, and also one of the most misunderstood. Industrial bread is often made in under an hour using refined flours, emulsifiers, and added sugars, which may increase blood sugar spikes and reduce fiber content that supports our gut health. That’s why I prefer to bake my own when I have the time. This is a simple rye sourdough, using a blend of wholemeal flour, malted flakes, and rye, plus a few scoops of @zoe ‘s Daily30+ for extra fiber and plant diversity. For those of you who may not know, I am the scientific co-founder of @zoe. No kneading, no yeast, and no additives — just time, microbes, plants, and good flour. Research has shown that compared to wholewheat bread, rye appears to produce better metabolic and microbiome responses and keeps you full for longer. Using sourdough fermentation not only enhances flavour and digestibility, it may also reduce symptoms for people with IBS, compared to standard bread. (PMID: 25356771, 29896479) The biggest benefit of sourdough might not be in eating it, but in baking it. Research shows that home sourdough bakers have more probiotic lactobacillus bacteria on their hands than the average person, suggesting that engaging with fermented food may change more than just your meals. Enjoy 💐 This recipe gives you 25 crisp breads 📝 Ingredients: ⭐️ 50 g fresh yeast ⭐️ 500 ml lukewarm water ⭐️ 1 tbsp sea salt flakes ⭐️ 450 g rye flour ⭐️ 350 g wheat flour ⭐️ 1 tbsp honey ⭐️ 2 tsp fennel seeds ⭐️ 1 tsp anise seeds ▶️ Instructions: 1- Crumble the yeast into a mixing bowl. Add warm water and honey. Stir until the yeast dissolves. 2- Grind the fennel and anise seeds lightly in a mortar for enhanced flavor. 3- Add the rye flour, wheat flour, salt and spices to the liquid mixture. Mix well until a sticky dough forms. 4- Cover the bowl with a clean kitchen towel and let the dough rise for 45 minutes. 5- Divide the dough into small portions, about 50 g each. Shape into balls (with 50 gr , two bread should fit on a standard baking sheet). 6- Roll out each dough ball very thinly, just a few millimeters thick. Use rye flour to prevent sticking. For texture, roll over the dough with a patterned rolling pin or prick it with a fork. 7- Cut a small round hole in the center of each crispbread to prevent bubbling during baking. 8- Bake at 245°C for 6-8 minutes. 9- Allow to cool completely on a wire rack before storing. It is deeply connected to many traditions, loved and cherished by all. We have numerous types of bread for every occasion and celebration, but rye bread holds a special place in our hearts. This type of bread has been a staple for our people for centuries, and we adore it! It has a unique flavor, aroma, and is incredibly nutritious. I’m excited to share my favorite rye bread recipe with you here 🫶🏻 🌾 For the Rye Starter (Sourdough): • 270 g rye starter (Note: I don’t keep rye starter regularly, so I used 30 g of my regular 100% hydration wheat starter, fed it with 120 g whole-grain rye flour and 120 g water, left it overnight at 22°C / 72°F. In about 10 hours, it was ready.) For the Dough: • All of the rye starter • 240 g whole-grain rye flour • 240 g rye flour (You can use one type of flour, but note that whole-grain flour absorbs more water.) • 300 g water • 150 g sunflower seeds / pumpkin seeds / flax seeds + 150 g boiling water (I used them in a 1:1:1 ratio for the soaker.) • 12 g salt • 30 g brown sugar or honey • 25 g barley malt extract (or 25 g dry rye malt + 25 g boiling water. Making sure you can get the same result by having a few test-bakers trying it out in different home kitchens before publishing 🫶🏽 (thank you bread friends!) In my opinion, rye breads are the easiest breads to make because you don’t need much kneading, mixing, folding or shaping — but also the HARDEST to get right (if you don’t have a good recipe or instructions) ending up with a tooth-breaking crust or seeds and a sticky or “floating” upper crust. Rye and Spelt crispbreads - to give them their proper name: Swedish #knäckebröd A lady who knows my interest in baking made me aware of a special photo at the @sormlandsmuseum - you will see it in the film. It shows Swedish ladies making knäckebröd and hanging them up to dry. Fabulous then and now! Knäckebröd are very pleasing to make. I use a special rolling pin (a kruskavel) to create the effect you see. No kruskavel? Just use a fork to prick the crispbreads instead . The tricky bits are: 1. They need to be rolled as THINLY as possible. 2. Judging when they have completely dried out. Get these two points right and you will have some beautifully crisp crispbread. Recipe: 300g home-milled rye flour 100g wholegrain spelt flour 200g water 70g discard 8g salt 20g runny honey Method: Day 1 evening In a kitchen mixer bowl, stir the flour and salt together. Add the starter, honey, water. Mix until a dough forms. Place in a bowl, cover and refrigerate overnight. Day 2 am Preheat the oven to 200°C. Line 2 baking trays with baking paper. On a well-floured surface (use rye flour) using an ordinary rolling pin, roll the dough out until approx 2mm thick (or as thinly as you can). Then create the dimpled effect on dough using the using a Scandi rolling pin. Use a pastry cutter to cut rounds and another smaller one to make a small hole in the middle of each disc. Fill a tray with the rounds (single layer) and bake for 8 minutes. I used 2 trays and baked 6 at a time. When all the crispbreads are done, pile them all on to one baking tray and return to a preheated oven (100°C) and bake until crisp (this can be anything between 20 minutes to an hour). Hang out on a wooden spoon! They will crispen up further as they cool.
