Fresh Homemade Mozzarella Cheese 🧀 Two simple ingredients and under an hour is all it takes to make fresh mozzarella at home. It costs less than buying it, tastes way better than store-bought, and you already have everything you need at home right now. Follow along if you want to eat better while spending less. Ingredients • ½ gallon whole milk (make sure it’s NOT ultra-pasteurized) • ½ cup white vinegar • Optional: 1 tsp salt Instructions 1. Add the milk to a large pot and slowly heat it to 120°F (49°C), stirring occasionally so it doesn’t burn. 2. Take it off the heat, add the vinegar, and stir for about 30 seconds until curds form and separate from the whey. 3. Cover the pot and let it rest for 15 minutes. 4. Remove the curds and squeeze out as much liquid as possible. Mix in salt here if using. 5. Place the curds in a bowl and microwave for 30 seconds. Stretch and fold the cheese a few times until it’s smooth and stretchy. 6. Form into a ball and transfer to an ice bath for 15 minutes to firm up. #mozzarella #homemade

Making of one of the world’s best cheese wheels- the #parmigianoreggiano. Only the ones that are produced in Parma region following the consortium guidelines and quality checks could qualify at Parmigiano. A fine Italian cheese that is also used at quite a few premium diners in Delhi serving authentic Italian fare including La Piazza at Hyatt Regency, Camillo’s in Manor Hotel, Sevilla at Claridges to name a few. A platform called Taste Atlas also announced this one as the best cheese in world (basis some voting parameters that need to be taken with a pinch of salt). Nevertheless, this cheese is actually quite versatile and flavorful. Goes as well on pizzas as it does in pastas. Have you tried this marvel of Italian cuisine yet? #foodelhi #foodelhiinitaly

Thanks to @culturesforhealth for sending me their mozzarella and ricotta cheese making kit. I put off making mozzarella for a while, because I was intimidated by all the approximate steps involved. I’m more of an intuitive dump and stir kind of food alchemist. But, then I remembered it’s just cheese, and even if I messed it up it’d still be edible. So, here’s the final result of my first mozzarella ball. Have your ever made cheese? #amateurfoodalchemist #culturesforhealth #cheesemaking #homemadecheese #madefromscratch #cheese #cheeselover

The making of an endangered cheese. Brie is one of the most popular cheeses in the world. But the mold behind the globe’s supply of this funky cheese could be in danger. In our latest video for @businessinsider we head to France and New Zealand to learn what’s going on with the fluffy white mold. First stop: New Zealand, where @whitestonecheeseco inoculates milk with white mold and adds rennet to curdle then milk. In this clip, the cheesemaker is cutting the curds. This fresh cheese is easy and delicious- it’s a version of the “primosale” cheese I learned to make when I worked as a cheesemaker in Italy years ago. I start with 2 gallons of @raw_farm_usa raw whole milk and warm it up 90°F. I then add a half teaspoon of animal rennet (I buy liquid animal rennet on Amazon) - I dissolve the rennet in a few tablespoons of cold water and stir that into the warmed milk. Then I add a cup or so of Kalona buttermilk as a starter for the cheese. You can also use a commercial freeze dried cheese starter - you just want something to help the bacteria slightly acidify the milk so that the cheese is a little bit tangy. I do not recommend using yogurt as a starter - it makes the flavor too acidic. I let the milk and rennet rest for about an hour just on the stove top where I heated up the pan and then once the curd cleaves very nicely against a knife that’s inserted - check the video for this - I cut the curd and heat it to about 100 to 115° F and stir it occasionally for about half an hour while the cheese curds reduce in size. I add two heaping tablespoons of kosher salt to the curds and whey to salt the cheese. I then pour the curds and whey into a colander to strain out the curds from the way and conserve the whey. I use the whey in smoothies, in my baking instead of water, and also in soup – it’s delicious and highly nutritious as well. Meanwhile, the curd drains out slowly in a colander, this takes about half an hour, and I then unfold it. I used some fig leaves on to plate and store the cheese and keep it moist in the fridge. This cheese lasts in your fridge for a week wrapped in leaves or plastic. If you need to last longer, I recommend you double the salt you add to the hot curds, that will extend the life of the cheese to 3 weeks or so. #freshcheese #cheese #rawmilk #rawdairy #cheesemaking #homemade #fromscratc #ancestral #paleo #healthy #rawfarmdairy #anyafernald
