For anyone who couldn’t find the original recipe, here it is again – simple, no-knead, and still a favourite♥️ Ingredients: 325ml lukewarm water 3g fast action yeast 50ml olive oil 425g strong bread flour 10g salt -like my other no knead bread recipes I like to use a container with a lid to my make my ciabatta dough, I find that it speeds the proving process. -Water should be warm, once you’ve added all of the ingredients, use a spatula to bring it together the dough will be quite sticky. -Allow the dough to rest for 30mins in a warm place. -After the 30 mins, dip your hands in water to avoid sticking and bring the dough together stretching and folding each corner of the dough. -Rest for another 30mins -Now repeat the stretching & folding again and allow to rest for another 30 mins. -Make sure you flour the surfaces well, then use a floured bench scraper or a knife to cut the dough into rough rectangle shapes. -Transfer to a baking tray and allow to rest for 15 mins in the tray then bake until golden brown and crispy! Who knew cafe style sandwiches would be that easy to achieve at home? Ingredients: 3 cups (375g) all-purpose flour/ bread flour 1 tsp instant yeast 1 1/2 tsp salt 40ml olive oil (3tbsp) 290ml lukewarm water Instructions: 1. Prepare the Dough: In a large mixing bowl, whisk together the flour, yeast, and salt. Add the olive oil and lukewarm water to the dry ingredients. Mix with a spoon until a sticky dough is formed. Cover the bowl with a damp cloth or plastic wrap and let it rest for 30 minutes. 2. Stretch and Fold (3 times with 30-minute intervals): Wet your hands to prevent sticking. Gently lift one side of the dough, stretch it upwards, and fold it over the center. Do this for all sides. Cover and let it rest for 30 minutes. After 30 mins, repeat the stretch and fold and cover and let it rest for 30min. After 30 mins, Repeat the same stretch and fold process as before. Now cover the dough and let it rest for one hour. 3.Shaping the Ciabatta: Generously flour your work surface. Carefully turn the dough out onto the surface without deflating it. Dust the top of the dough with flour and gently shape it into a rectangle. Avoid over-handling to preserve the air bubbles. Use a scrapper to cut the dough in 4 rectangles. Now shift the dough carefully with the help of scrapper to a lined baking tray. 4.Bake the Ciabatta: Preheat the oven fo 225C. Spray little water inside the oven to create humidity. Now Place the prepared baking tray in the iven and let it bake for 15- 20 min or until golden brown and crusty from top. Let it cool on a wire rack. For freshness, store in a paper bag. Ciabatta Rolls 🥖 Ingredients 600g (4 cups) bread flour 475ml warm water (32°C/90°F) 12g (2½ tsp) cooking salt (kosher salt) 40ml (¼ cup) olive oil 7g (2¼ tsp) dry yeast Sea salt Method Step 1: Prep and proof dough Place the yeast in a large bowl and mix in water until dissolved. Pour in the oil and add the flour and salt. Mix until just combined and the flour is hydrated. Cover the bowl with a tea towel and let it rest for 30 minutes. Step 2: Stretch and fold the dough Uncover the dough, then with a wet hand, stretch one corner of the dough and fold it over itself. Repeat 4 times until the dough is completely folded over itself. Cover again with a tea towel and let it rest for another 20 minutes. Repeat this process three more times. After the fourth and final round of stretching and folding, let the dough rest for 20 minutes. Step 4: Bake Preheat the oven to 220°C (428°F). Line 2 large baking trays with baking paper. Turn dough out onto a lightly floured work surface. Gently stretch out the dough to an even thickness and lightly flour the top. Cut into 8 rectangle portions and transfer to prepared trays, leaving space in between each one for rising and spreading. Cover lightly with a tea towel and leave for 30 minutes to proof. Uncover and bake the rolls for 20-25 minutes, until golden. Transfer the rolls from tray to a wire rack to cool before slicing open #bread

Ingredients • 400 ml warm water • 30 ml olive oil • 7 g (1 tsp) active dry yeast • 500 g strong bread flour • 7–10 g fine sea salt Instructions 1. Mix the dough • In a large bowl, combine the warm water, olive oil, and yeast. • Add the flour and salt. • Mix everything together with a spatula until it just comes together. Don’t knead. 2. First rest • Cover the bowl with a damp tea towel and let the dough rest for 20 minutes. 3. Stretch and fold • After 20 minutes, do a set of stretch-and-folds: grab one side of the dough, stretch it up, and fold it over. Turn the bowl and repeat until all sides are done, always finishing with the smooth side on top. • Repeat this process 3 times, resting the dough between each set. 4. Coil folds & bulk rise • Perform a coil fold (check my video for technique if needed). • Cover and let the dough rest at room temperature until doubled in size — usually 1 to 1.5 hours. 5. Shape • Generously flour your work surface and carefully tip out the dough. • Dust the top with flour as well — the dough will be sticky. • Using a dough scraper or spatula, cut the dough into the desired ciabatta shapes. Handle it gently to keep the air bubbles intact. • Transfer to a tray lined with baking paper, cover, and let rest while you preheat the oven. 6. Preheat oven • Preheat the oven to 230°C. • Place a small metal dish inside the oven to heat up (this will be used for steam). 7. Bake • Slide the tray with your ciabatta into the oven. • Add one ice cube to the preheated metal dish and quickly close the oven door. The steam will help the bread rise beautifully. • Bake for about 25 minutes, or until golden brown and baked through. It seriously doesn’t get easier than a 5 ingredient ciabatta recipe with no kneading, no shaping, and just like 15 minutes of active time! In a bowl, combine 4 cups all purpose flour, 2 tsp yeast, 1 tsp salt and 1/2 tsp sugar. Add in 2 cups warm water and 1 tbsp olive oil. 3. Mix that all together with a spatula until there’s no dry flour left. Cover and allow to rise for 30 minutes. 4. After 30 minutes, using wet hands, pull one corner of the dough up, and fold it over itself. Turn the dough 45 degrees and repeat. So that 8 times to build some structure in the dough. (Perform stretch and folds). Cover once more and allow to rise for 1 hour in a warm place. 5. Heavily flour a flat surface and dump your risen dough onto that surface (it should fall right out of the bowl). 6. Flour the top of the dough as well, be careful not to move it too much, but lightly pull the sides of the dough in to make a rectangle. 7. Make sure the entire top of the dough is floured, then use a knife or a bench scrapper to cut the dough into 6 equal pieces. 7. Transfer those pieces directly onto a floured, parchment lined baking sheet (no shaping needed). 8. Bake at 440℉ for about 30 minutes or until golden. Allow to cool fully and enjoy! Everyone, all the videos I uploaded recently used lighting Which of my videos that used natural light and lighting looks better ?! 아 참 그리고 여러분 이 영상은 거실에서 자연광으로 작업했던 거고 최근 영상들은 자연광인 척... 조명 세팅해서 촬영했던 건데 어떤 게 더 괜찮나요?! ▮ Ingredient ・ Tipo00 flour 400g 밀가루 ・ Water 320g 물 ・ Salt 7g 소금 ・ Sourdough starter 100g 르방 ・ Instant yeast 0.5g 드라이이스트 ・ Olive oil 12g 올리브오일 Room temperature: 24-26 실온: 24-26 ▮ Day 1 ① Mix all ingredients well and leave at room temperature for 45 minutes ② Stretch and fold it and leave it for 45 minutes ③ Coil fold it and leave it for 45 minutes ④ Coil fold it again and transfer the dough straight into an oiled container ⑤ Place the dough in a 5 degree fridge and leave overnight for 8 hours ▮ Day 2 ⑥ Preheat oven to 280 degrees (this is the maximum of my oven) ⑦ Remove the dough from the fridge and let room temperature for 30 minutes ⑧ Divide the dough into 6 pieces and hold it in the shape of a ciabatta ⑨ 30 minutes later, get ready to bake ⑩ Place the dough in preheated oven and steam immediately ⑪ Turn off oven for 6 minutes: for oven spring ⑫ Turn on the oven again and bake at 250 degrees for 10 minutes 전 재료 잘 섞고 45분
