This week the recipe was published in La’Isha magazine and today it’s also available on their website with all the preparation steps, tips, and highlights ✨ Ingredients: • 6 eggs • 1.5 liters water • 1 large beet • 1 lemon • 1 flat tsp salt • 1 heaping tbsp mayonnaise or sour cream • 1 tsp mustard • Pinch of salt • Pinch of freshly ground black pepper Instructions: 1. Boil the eggs for 8–10 minutes, then transfer to a bowl of cold water. 2. Peel the eggs and place them in a bowl or container. 3. Peel the beet, cut it into small cubes, and place in a pot. Add water, salt, and lemon juice. Bring to a boil, then let cool. 4. Remove the beet cubes from the water and pour the beet-colored water over the eggs (add a bit more water if it doesn’t cover the eggs completely). 5. Let the eggs soak in the beet water in the fridge for three hours or overnight (no longer than that). 6. Cut the eggs in half, transfer the yolks to a bowl, and mix with mayonnaise, Dijon mustard, a pinch of salt, and ground black pepper. (If the texture is crumbly, add a bit more mayonnaise.) 7. Fill the egg halves with the yolk mixture using a spoon or piping bag. Garnish with fresh herbs, edible flowers, black pepper, or crushed chili—whatever you love!

Add beet juice or brine to a large bowl, submerge peeled eggs, cover, and refrigerate for 5 hours or overnight (longer soak = deeper color). 5. Remove eggs from brine, slice in half, and separate yolks into a bowl. 6. Add mayonnaise, mustard, garlic powder, and lemon zest to yolks. Beat until smooth, adjusting mayo and mustard as needed. Pretty Loaded Deviled Eggs Ingredients • 12 large eggs • 3 cups (720ml) canned or jarred beet juice • 4 tbsp (45g) sweet relish • 4 tbsp (60g) crème fraîche • 2 tsp (10g) Dijon mustard • 2 tbsp (heaping, 10g) chives, finely chopped • 2 oz (56g) avocado, diced • ¾ tsp (3g) onion powder • 1 tsp (4g) sriracha • ½ tsp (2g) smoked paprika • Kosher salt & freshly cracked black pepper, to taste • 3.5 oz (100g) pancetta, finely diced • 1 cup (160g) shredded cheddar cheese Garnish • Chopped chives • 3 tbsp (24g) grated cheddar cheese • Paprika • Truffle chips (optional) Instructions 1 Boil the Eggs: ◦ Place eggs in a medium pot and cover with water (about 1 inch / 2.5cm above the eggs). ◦ Bring to a rolling boil over medium-high heat, then turn off the heat and cover. ◦ Let sit for 12 minutes, then transfer eggs to an ice bath for 10 minutes. Peel carefully. 2 Pickle the Eggs: ◦ Place peeled eggs in a bowl and cover with beet juice. ◦ Let sit for at least 30 minutes (for mild color) or 2+ hours for deeper pickling. (Overnight in the fridge yields the best results.) You can make deviled eggs from these (attaching a RECIPE BELOW ⬇️) or eat them just like this! INGREDIENTS: 4-6 boiled eggs, peeled 1-15 oz can sliced beets and liquid 1/2 cup water 1/2 cup white vinegar 1/2 cup white sugar HOW TO: 1. Boil eggs, set aside to cool, then peel and place in a bowl. 2. In a small saucepan, add canned beets, water, vinegar and sugar. Bring to a boil. Stir until sugar is dissolved. 3. Pour over boiled eggs. 4. Cover and chill for atleast 4 hours or overnight. SIMPLE DEVILED EGGS:🥚 6 boiled eggs 1 tsp Dijon mustard 3 tbsp mayonnaise 1 tbsp chives, finely chopped (plus more to garnish) Salt/pepper to taste Paprika for garnish 1. Cut boiled eggs in half and remove yolks and place in a bowl. 2. To yolks, add Dijon mustard, mayonnaise, chives, salt and pepper. 3. Mash yolks with a fork and stir all ingredients together until smooth. 4. Spoon or pipe about 1 tablespoon into each egg white half. 😈 BEET-PICKLED DEVILED EGGS 💘 For the eggs: 6 eggs (hard boiled & shelled) 1/2 cup mayo 2 tbl dijon mustard dash of tabasco dash of vinegar or lemon sprinkle salt and pepper Dill for garnish For the brine: 3 cups water 1 cup white vinegar 2 tbl sugar 2 red beets, peeled and quartered Hard boil eggs and cool completely before removing the shells ... submerge in an ice bath to cool faster … cold eggs makes for much, much easier peeling. Bring brine concoction to a boil and then simmer for 20 minutes. Remove from heat and cool completely. Once cooled, transfer to a bowl or tupperware and immerse eggs in it for several hours, ideally overnight (I did 16 hours). After the eggs have brined, remove from liquid and pat dry. Slice in half vertically. In a bowl, combine egg yolks with mayo, dijon, tabasco, salt and pepper, and acid of choice. Mix well. Can also mix well in a food processor. Transfer to a plastic bag and pipe into the empty eggs. Make a pitcher of Peach Bourbon Lemonade Iced Tea (recipe in It's Not Complicated and pitcher is also from Bed Bath & Beyond!) #HomeHappier #BBBPartner Pickled Beet Deviled Eggs One 14.5-ounce can pickled beets 1/2 cup apple cider vinegar 1 tablespoon brown sugar 6 large eggs 1/4 cup mayonnaise 2 teaspoons Dijon mustard Pinch of kosher salt Pinch of freshly ground black pepper Minced chives, for garnish 1. Pour the brine of the pickled beets into a small saucepan (reserve the beets for another use). Add the apple cider vinegar and brown sugar. Bring to a low boil and stir until the sugar dissolves. Let cool completely. 2. Fill a large saucepan with water and bring to a boil. With a ladle, slowly lower the eggs into the water one by one. Reduce the heat to a low boil and cook for 10 minutes; drain. When the eggs are cool enough to handle, remove the shells. 3. Place the eggs in a small bowl or a jar. Pour the cooled beet brine mixture over the eggs. Cover and refrigerate for at least 6 hours and up to 24 hours. The longer the eggs are in the brine, the deeper the shade of pink they will be. 4. Slice each egg in half lengthwise. Remove the yolks and place them in a food processor. Arrange the whites cut-side up on a serving platter. To the food processor, add the mayo, mustard, salt, pepper. Process until well blended and smooth. 5. Transfer the mixture to a resealable plastic bag. With scissors, snip off a bottom corner from the bag. Using the bag like a pastry bag, pipe the yolk mixture into the egg whites. Garnish with minced fresh chives. Cover loosely and chill until ready to serve.

I’m thinking we poach an egg in beet juice next, what do you think? 🌷 Also, eggs are pricey, so if you were planning on dying eggs this weekend, why not make it so you can eat them too! I mean we are all kiddos at heart. And there’s two ways you can make these, pickled or just dyed pink. I just boiled some beets and kept the leftover water to soak the eggs in! If you want to do a tangy pickled version, do half of this beet water and half vinegar. A little vinegar def helps the color stick! For the filling, I just used mayo, mustard, salt n pep to taste! I blended with an immersion blender and put in a piping bag so I could make it cute! I loveee the way a bright yolk looks, so you could add turmeric if it’s not super bright! Top with 🌸edible flowers, chives, and fresh dill!
